Slow Cooker Sunday

Normally, I go off of recipes to make my meals. I’m talking I follow step-by-step, tbsp by tbsp, but today, I did the unthinkable…I made my own recipe. I looked in the cabinets to see what we had cause I didn’t feel like going to the store and all the recipes I normally make didn’t sound good, and that my friends is how “Cajun Beef Stew” happened.

Cajun Beef Stew

Yields 3-1 cup servings

1- 14 oz can Mexican style stewed tomatoes

1 can large butter beans; drained

1 package stir fry beef; frozen (this package was a little under a pound) 

1 1/2 tbsp Cajun powder

1 1/2 tbsp Chili powder

1 tbsp Garlic powder

1 tbsp green pepper sauce

Combine stewed tomatoes, beans, and green pepper sauce in bottom of crock pot. Place beef on top. Sprinkle part seasonings on top of beef, then flip beef and season again. Cover and cook on high for 8 hours. Stir occasionally. The sauce will look thin throughout cooking, but at about 7 hours it will thicken up. Serve over whole grain brown rice or noodles.
