Slowcooker Sunday!

Most Sundays I have a recipe plan for my slowcooker meal. But today, after a night of a little too much champagne and a lot of dancing, I’m just winging it. I took a look around in the fridge, freezer, and pantry and thru this together.

Mexi-Cali Chicken

3 frozen chicken breasts

1 can of Rotel- I used the original with diced tomatoes and mild green chiles.

1 can of water

1/2 cup of Buffalo sauce

1 tbsp of cumin

1 tbsp of chili powder

1/2 tbsp of ground mustard

1 package of cream cheese

Place the frozen chicken breast in the crockpot. Add the can of rotel and then fill the can with water. Throw the water in and add the buffalo sauce. Finally add the spices and put the block of cream cheese on top. Turn crockpot on low for 8 hours. Enjoy over rice or with tortilla chips.

As for the rest of this Sunday, I’m heading to the mall quick with babytooth and then it’s back here for game 6. LET’S GO RANGERS! #nyrbelieve All I want for Mother’s Day, is a “W”. Xo.
